I am looking for a device that will switch a 120VAC load using a 5V DC
control signal. Anyone know of such a device?

It's called a relay.
If you go to Digikey and plug in "Solid-State Relay",
you'll get a bunch of sensitive, long-lasting items.

....and if you had the slightest idea what you were doing,
you would have specified what *currents* you are dealing with.

You should also investigate the concept of "zero-crossing turn-on".
