I have 2 tiny CCD camera's (once used for videoconferencing).
Is it possible to convert the composite-video signal to USB, so I can
use them as webcam ?
If so are there any schematics ?

Thanks in advance.

Yes it is possible, there is a company in Australia that is selling them,
they call it "USB1.1 Capture Box"
Supports RCA-jack (cvbs) & mini din (s-video/y-c) input, captures up to
30fps.

The problem is, that it would cost as much or more than new Webcam to buy
it.
