Can anyone recommend schematic drawing software that incorporates tube
based circuits? Particularly transformers with multiple windings.

LTSpice. You can create absolutely everything you want. For transformers of
multiple windings: draw a few inductors, then couple them using the 'K' element.

output transformer (push pull centre 4/8/16 ohm) in SuperSpice. If this
is tube guitar amps your talking about, there are also single coil and

I downloaded the demo version but don't see transformers with a center
tapped secondary and another secondary winding for tube heaters. Am I
missing something?

Ahh... As I noted, I meant the centre tap primary with the 4/8/16 ohm
secondary *speaker* output transformer. I'll see about knocking up a PS
one with heater windings. I usually don't worry about the PS one, as one
usually just uses voltage sources. Simulation with heaters is rarely
done, so again I didn't bother to make one.

You probably need to (1), build your own symbol or (2), make a
multi-winding transformer using the coupled-inductors approach.

Even building your own symbol will require a subcircuit with coupled
inductors.

The OP was asking for schematic drawing software, rather than simulation
software per se...
