By doing research, I was able to reverse polarity on the motor to get it to go in reverse, as I wanted, but the speed adjuster doesn't work now - its stuck on 78 and I need it to go at 45 rpm.

Anyone familiar with the wiring on these?
 
You probably reversed polarity to the whole schmaltz. You need to only reverse the polarity to the motor.

It may have a tachometer to make the motor run at the right speed. You
might have to reverse the wires to the tach as well. If the wires are not
reversed, it might not register the output from ther tach and this go as
fast as it can.
