Hi Doe's anyone know of a adjustable power supply circuit for a 12v
soldering iron.

Do you mean that you want to run it from a 12V power supply, and you want
a "dimmer"?
The trivial way would be 555 + relay, switching on and off every second
or so, with the appropriate mark/space ratio.
The slightly less trivial one would be to replace the relay with an
appropriate MOSFET.
 
hmm
use a HexFet that will handle the current and a simple 555 to act as a
PWM (pulse width Modulator) to control the on duration.
