....any recommendations for where to find a good little single axis
centre-return spring loaded potentiometer joystick? (as close to full
range as possible would be preferable - to be fed to an ADC) thanks!

Every traditional radio control transmitter uses joysticks like this. Some

are available as spares.

Cheap gamepad controllers often have analog pots built in that
might be of use.
