pickit1 question

At the begining of any .asm file we have

__CONFIG _CP_OFF & _WDT_OFF & _BODEN & _PWRTE_ON & _INTRC_OSC_NOCLKOUT & _MCLRE_OFF & _CPD_OFF

These options are defined in the .inc file, but other than guessing
how do I know what they do?

You have to look them up. They are like any other arbitrary name, in the
eye of the beholder (or the programmer).
