I have a "spare" 65Ah battery and I was wondering if it would be ok to use on a
smaller car in which the standard battery is only 36Ah? (Both are 12V :) )

It should work fine however... Make sure your 65 AH battery is designed for
starting engines and isn't a "deep discharge" camping/caravan battery. Deep
discharge batteries can't usually provide enough Amps to start a car.

If you are replacing a smaller battery with a larger one, then the only
problem will be the mechanics of holding it down with the existing
mounting bracket.
