You are not generally going to get a schematic of a commercial mouse.

However there are several 'example' schematics from the manufacturers of
chips used in mice. If you look at:

This is a complete application note, on how to build a mouse using a PIC,
including the circuit diagram.

Any number of _millions_. Do a search on 'quadrature encoders'. There are

about a dozen notes on decoding quadrature signals using either hardware or
software on the MicroChip site alone. HP, have a set of notes for their
hardware decoders. Have a look at:

which gives a 'history' of th mouse, and the circuit for a basic decoder.
