How are monolithic ceramic capacitors different from normal ceramic
capacitors ? What is recommended out of the two for bypass capacitors ?

Monolithic multilayer ceramics are smaller than the equivalent ceramic disc.
They are both good for bypassing.

A monolithis is built up of multiple layers of ceramic and metal, and fired
after the pile is built up, so you get thinner dielectric layers, and so
more capacitance in the smaller package. "Ordinary" ceramics just have the
one ceramic piece with metal plated onto either side.
