Just learning how to use OrCAD (from MultiSIM) and was wondering how to use
orcad's 8 bit ADC "ADC8Break" part. How do I determine what the pins mean?

The pins in general are
IN analog in
REF common mode voltage??
AGND analog ground
CNVRT ????
STAT ????
OVER ????

Any help apprec.

Take a look in the documentation (it should have been installed on your
hard drive) and look in the PSpice Reference Guide. It will have
complete specs on this part, including pin descriptions, timing setup, etc.
