A Fuji digital camera needs constant three volts/
current. What are simple ways to get a (3.7Vdc @
500 mA, 120Vac generic adapter) to go constant at
3Vdc @ 800mA?

There's no way it can be done as the adapter simply can't supply enough
power. A '1 amp' adapter with a (schottky) diode in series with the positive
lead, would be OK.
My Fuji A101 needs 3V at 1 amp (flattens a new set of batteries in 10
minutes) is quite happy when fed with 3.0V to 3.8V from an external, 1amp
capable power source.

use serially on + line properly oriented 1N4007 diode between the
supply & camera DC input ... :)

Good advice from both, I'd used a 2.5A regulated
3V Kodak adapter after working hopelessly using
diodes to stabilize the voltage.

Kodak 3V, 2.5A regulated components.
