Is there any way to show what command (and with what arguments) is
called by performing an UI action?

The command will be logged to the CDS.log file with a \a (accelerated input)
prefix if it is invoked by a menu pick or a bindkey.

They can be also seen in the CIW output area if "menu commands" is checked
on the "Show Input" line of the log filter form.

If you've got the license for it there is the SKILL debugger (in
tools->skill toolbox i think) which allows you to trace function calls.
