Hi,

I have a microprocessor evaluation board which contains a 5V output. The
output comes from a regulator rather than the microprocessor. If I
connected something to the 5V output which required more current than was
available, could I damage the processor or any other equipment?

If this output is intended as a power supply to external circuits (which I
think it is, based on what you said above) then make sure you don't exceed
the maximum current it can supply. If you do, the regulator will overheat
and something will get damaged sooner or later.
