AD725=SOIC or SOIC wide?

Since I haven't found any AD-725 component for Eagle I have to make my
own.
But I'm a little confused about the type of package being used. The
datasheet simply says "16 pin SOIC" while an AD-724 component I found
in some Eagle schematic I downloaded uses a 16-pin SOIC-wide
configuration.

I looked up Wikipedia, and apparently there are two 16 pin
configurations for the 16-pin SOIC packages (http://en.wikipedia.org/
wiki/Small-Outline_Integrated_Circuit)

So which one is the AD-725 (and AD-724)?

Keep reading the datasheet and all will be revealed. Look at page 3 under
PIN CONFIGURATION and in particular page 18 (OUTLINE DIMENSIONS).

Learning to FULLY read datasheets is essential to successfully using any
electronic part.
